Greens 179 to 181 and Vegetarian for a Month

I haven’t been feeling all that great lately and my appetite is sporadic. I decided to just cut out meat for a while just to see if I felt better. Then I walked into the Library October 1st and there it was – Celebrate National Vegetarian Awareness Month. At first I wanted to crack jokes about being aware that there were vegetarians in the world, but then I decided what the heck. I picked out a new recipe book for some inspiration and headed home. So I’ve decided to just go for it. Today I had some spicy green beans and kale over brown rice and a salad with homemade cucumber tahini dressing off the Blendtec website. Last night we had lentils and tomatoes with chard over polenta, one of our favorites from Jack Bishop’s Complete Italian Vegetarian Cookbook.
